Usually I’d add a ton of herbs and veggies to pasta however I discovered this attractive rainbow pasta and I didn’t need something to detract from its magnificence. I’ve been spending a variety of digital time on the Amalfi Coast just lately (my mother and I are hooked on Nicki Positano’s YouTube channel, The Positano Diaries) and one factor that at all times strikes me is how easy so many Italian dishes are. So I assumed, why not simply make a straightforward lemony pasta!
I packed this up for my Lemon Lakeside Picnic at The Harbor yesterday. I ate it alongside a spinach salad with blueberries and cucumber, a successful combo!
Rainbow Pasta Salad
1 pound rainbow pasta, raw
Lemon dressing, recipe follows
8 oz feta cheese
1/4 cup pine nuts
- Prepare dinner pasta in keeping with package deal instructions.
- Whereas pasta is cooking, whisk collectively lemon dressing (see under).
- When pasta is cooked al dente, drain and instantly toss with half of the lemon dressing. Let cool for about twenty minutes, then toss with feta cheese and pine nuts. Chill till able to serve, then toss with remaining dressing.
Lemon Dressing
Zest from one massive lemon
1/4 lemon juice (one massive or two small lemons)
1/4 additional virgin olive oil
Salt, pepper
- Zest and juice lemons. Slowly whisk in olive oil. Season to style with salt and pepper.
